Shelly's Chicken Enchilada Sausage

I love that sometimes when you get a craving for something, it can lead to one of your best kitchen creations!

I had some chicken sausage in the fridge and I hadn't really made anything with chicken sausage before, but I had a craving for some rice like you get when you go out to a Mexican restaurant, so I decided to get creative!

I was originally thinking, maybe I'll just make them like chicken parm, but I really wanted the rice, and Chris and I love Chicken enchiladas, and i had just bought fresh Jalapeño... what if I cook off the sausage and just like chicken parm, top it with the sauce and cheese... ohhh and add the jalapeños! For the rice I can cook it in chicken broth instead of water and add fajita seasoning! The dish idea was born!


I followed the rice packet instructions using the same amount of chicken broth as you would water, and sprinkling in fajita seasoning. I used the rice packet for the cooking instructions as well. For the chicken, I cooked it off in the oven in a cast iron pan, sprinkled with fajita seasoning, flipping it once. When I had about 6 minutes left on the simmering rice I added the Jalapeños. With about 3 minutes left on the rice I added the sauce on the jalapeños and the sausage. To complete the dish I sprinkled fiesta blend cheese over the sausage, and using tongs, i moved the jalapeños out of the sauce and on top of the cheesed sausage. I then broiled this for about 3 minutes in the oven to help melt the cheese.


I served the sausage over the rice, and we loved it! I added a scoop of sour cream to mine after I took the photo, and it was the perfect addition. The enchilada sauce was canned and a hot one, so I wanted something to cut the heat. I also drizzled some extra sauce over the dish as I plated it.
