Roasted Red Pepper and Feta Dip
I took some friends from out of town to visit a friend at Penn State and we found ourselves at a new spot, Big Spring Spirit in Bellefonte PA! The drinks are delicious and fun and the appetizers we had were also delicious! We had a roasted red pepper and feta dip with naan bread and highly enjoyed it! So I decided to try it myself!
Ingredients:
8oz feta cheese (room. temperature)
1 medium red pepper, roasted
2 garlic cloves
2 tsp lemon juice
1 tsp oregano
1 tsp smoked paprika
1/2 tsp cayenne
1 tsp pepper
1/2 tsp salt
To roast the pepper, I cut it in half, removed the seeds and stem and put under the broiler in the oven until it had some char to it, I used the low broiler and it took about 5 minutes (broilers may vary)
I let the pepper cool to room temperature
Combined all ingredients into a food processor, and pureed until smooth
Additional ideas:
You could put in some greek yogurt, about a 1/2 cup
You could whip the feta cheese and put in a bowl and then puree all other ingredients and put on top as the restaurant did, makes for a unique dipping experience
Serve with Crackers, naan bread or whatever you feel is best! I even used carrots and it was delicious!
I roasted some extra pepper because I love roasted peppers, and chopped a few pieces to put on top as garnish, you could use extra feta crumbles as well or some parsley
