Raspberry Habanero Beef and Veggies
I was searching pinterest for some healthier dinner options when I came across a recipe for beef, red peppers and sweet potatoes. I thought it sounded great as it was, so I set out to the grocery store with the items on my list for making that recipe, but at the store a few things changed this recipe.
I picked up some beef cubs, sweet potato, but there was no red pepper or green pepper, so I grabbed some yellow and orange pepper. The next day I was making omelettes for breakfast and decided to put the peppers in them but would have plenty leftover, so I decided to chop up the peppers for dinner prep and then I decided to dice up some onion and some jalapeños as well so it was already for dinner that night. I just had to dice up the sweet potatoes. Another idea came to me in the meantime though; what if I tried the Raspberry habanero sauce from pampered chef! So I poured that over the beef cubes in a gallons size zip-bloc bag, and let that marinade until it was time to make dinner.
When it came time to cook dinner I had the sweet potatoes peeled and diced, pulled out the rest of my chopped veggies from the fridge and the marinaded beef. From there I grabbed my gigantic cast iron pan, because I was making a big batch of this (1.5 sweet potatoes, 2 yellow peppers, 2 orange peppers, 1.5 jalapeños, half a medium sized onion and about 2.5lbs of beef cubes). I preheated the oven to 350 degrees, drizzled some olive oil in the pan, and poured in all my veggies. The veggies were baked for about 12 minutes or so (they started to get tender and onions started to become translucent), and then I dumped the steak and marinade on top and cooked until the sweet potatoes were tender and the beef cooked to our liking. (Depending on how you like your beef you could add it in sooner if you prefer a more well done beef). From there I topped all of it with mozzarella cheese! One thing I forgot to mention was that I seasoned the veggies with garlic powder, pepper and seasoning salt, and added a bit more when I threw in the steak. We ate ours straight up in a bowl, but you could make this a sandwich or a wrap. The sauce was not overly spicy, nor were the jalapeños. Every once in a while I got a sweeter bite or a spicier one. For winging it, it turned out well. I am more of a grilled beef person, so Im not sure I would do the beef the same. Maybe next time I'd grill the beef separately, or use a different kind of beef. Im not a fan of baking my beef personally. I also feel like chicken could be a great protein for this dish. At the end of the day, we enjoyed, had a bit more of a healthy dinner and I had fun in the kitchen!
