Keto Friendly Clam Chowder
Clam chowder is a comfort food for me. In general, clams are one of my favorite foods whether steamed, drunken, raw, in a soup, fried, in a pasta dish or even on pizza, I love them! My parents make their own homemade clam chowder and have for years, so when I have clam chowder its like a taste of home! Unfortunately, clam chowder has potatoes which isn't keto friendly. I just knew someone had to have a recipe that would let me still enjoy one of my favorites, without sacrificing my carb intake.
Pinterest led me to this recipe, which I used as a guide for making it my own. I accidentally put an entire brick of cream cheese in instead of the 2oz, but I wasn't disappointed! I didn't follow the recipe to a T, I didn't measure the ingredients, added fresh parsley and bay leaves. One of the best parts about soup is that you can make it your own. You may spice it up, add more or less salt, add bacon or cheese, maybe noodles or rice when a recipe doesn't call for it. There are so many deliciously warm comforting soups out there! If you don't like potatoes in soup, like my brother, or maybe your on keto too or watching carbs, this is a great soup for you to try!
