Elote Grilled Corn Salad
One of my new favorite seasonings is Elote, so when my husband found a recipe for a corn salad to take to family dinner, I was excited! Of course we used it as a guideline, but made our own alterations to make it our own!
Ingredients:
6 ears of char grilled corn, cut off the cob
1/4 c of mayo
1/4 c of sour cream
1 poblano pepper, diced
1/4 c of fine diced yellow onion
2 cloves of finely diced garlic
2 lime wedges
1 Tbls of cilantro, chopped
Elote Seasoning to taste, garnish
Cotija Cheese to garnish
Sauté over medium heat the onion garlic and poblano pepper until tender
Remove from hit, in a medium mixing bowl, combine de-cobed corn, pepper, onion, garlic, elote seasoning, mayo, sour cream and cilantro. Mix until well combined.
Top with Cotija cheese, 2 lime wedges and sprinkle some elote seasoning on top
We chilled ours and served it cold which was delicious! You could also add the corn to the pan to reheat it with the peppers, onions and garlic and then add to the mixing bowl with the cilantro, mayo and sour cream to serve it hot. (This served 8 adults and 2 kids, with some seconds available)
Notes:
You can substitute the pablano for jalepenos or seranos
You can use some green onion in place of the yellow onion
As I did, you can save a few cilantro leaves or some chopped cilantro to garnish
The lime wedges can be squeezed to add some citrus to the dish
Extra Elote seasoning and cheese can be served with the dish should anyone desire more
Finally, you could do individual servings (hot or cold) which would just mean garnishing them separately
