Christmas Cinnabon Rolls


I absolutely love Cinnabon rolls! For a while now I have wanted to make my own homemade versus making them from a can. I was a bit nervous and with other Holiday food prep I was worried about having the time to make them. Truth is, they were pretty easy to make, the longest part was letting the dough rise! I followed a recipe I found on pinterest and as they suggested, I doubled the icing recipe, because I love the icing on a Cinnabon!


The nice part about this recipe is I was able to prep everything the day before so it was ready for Christmas morning. Since I was making some home made spaghetti sauce, a cheesecake and some other items, I was already working in the kitchen. As my tomatoes were simmering in my sauce and the flavors melding together, I decided to start the Cinnabon's.


Before we get to the recipe, I want to share a few things I did differently - First off, my icing is red, because it was Christmas I wanted to make it a little more Christmasy, so I added red food coloring to the icing. You could do green or you could do both if you do a double batch of icing and do half and half, you could add colored candies or sprinkles to make it festive or other food coloring depending on what you are celebrating. Be creative and have fun!


The second thing I did, and I believe the website does mention this, is that I decided to bake next day. This meant once I let the dough rise, added the cinnamon mixture and sliced into the roll sizes I wanted I covered them and put them in the fridge to keep them from rising further. The website also mentions you can freeze them, so if you wanted to make a larger batch at one time and freeze some you can.


The third thing I did, but don't recommend, is I realized I did not use the full amount of yeast, I believe I only used one packet, therefore mine did not rise as much. It did not impact the taste at all, but I just thought I'd mention it.


Lastly, I made a double batch of icing and refrigerated that over night as well. When morning came I took both the icing and buns out of the fridge. I removed the top from my foil pan, and let the cinnabons rise. After about 20 minutes to a half hour I stuck the Cinnabons in the oven, and when they came out, I put on the icing and from there we enjoyed! I continued to have them over the next couple days, heating them in the microwave for about 20 to 30 seconds just to get them warm and melt the icing.
