Blackberry Balsamic and Brie Grilled Cheese



I saw a photo of this somewhere online and I just had to try it! I made it for my mom and I and we loved it! This was another rather simple recipe. It was a bit messy, but all the best sandwiches are! You may be thinking that it was sweet with the berries, but the brie helps balance it out and the sour dough bread.


Ingredients (Yeilds 4 Sandwiches):


2 c Blackberries

6 tblsp Sugar

2 tblsp Lemon Juice

3 tblsp Balsamic Vinegar

Pinch Kosher Salt

300 g Brie Cheese

8 Slices Sourdough Bread

Butter


Steps:


  1. In a small saucepan combine the Blackberries, Sugar, Lemon Juice, Balsamic and Salt in the pan

  2. Bring to a boil, occasionally stirring

  3. After it reaches a boil, turn down to a simmer and use a potato masher to smash the blackberries

  4. Simmer for 10 minutes then set aside to let cool, it will start to thicken when the berries are mashed and will continue to do so while cooling

  5. Slice the Brie into about half inch slices

  6. butter one side of one piece of sourdough and place that side down, place the cheese slices on the non-buttered side

  7. Take another slice of bread and spread the blackberry jam on it, place on top of the brie, blackberry side down, butter the top piece of bread

  8. In a medium pan, over medium heat, fry the sandwich until golden brown on one side, then carefully flip and repeat for the other side

  9. Continue the process until all four sandwiches are made. NOTE: You can cook more then one at a time if you pan is big enough, and you can cut the sandwiches in half like I did even for presentation. I also like to use a saucepan lid to place over the sandwich as it fries, to help melt the cheese.
