Basil & Pesto

My husband and I had some basil in the garden and my Mother-in-law had some too, so we decided to get busy in the kitchen! First, we used some on a delicious Caprese Salad, then we made some Pesto! The Pesto we used on a chicken cutlet sandwich, the recipe is below.


My husband took 2 large chicken breasts and cut them in half length wise, breaded and fried them. While he did this, I made the pesto, sliced the tomato and red onion. Then we spread the pesto on the top of a kaiser roll, placed a piece of fried chicken cutlet on the bottom part of the roll, a slice of tomato and a couple slices of red onion, provolone cheese (we used a lighter to heat the cheese a bit) and enjoyed!


The Pesto:


1/2 Cup Roasted Pine Nuts (we roasted under the broiler for a few minutes)

1/2 Cup Tuscan Olive Oil (Humming Hills brand)

1/4 Cup Lemon Juice

3/4 Cup Parmesan Cheese (we did freshly grated)

2 Cup Fresh Basil

2 Garlic Cloves

Pinch of Salt

Pinch of Pepper


Combine all ingredients in a food processor and puree.
