Goat Cheese and Beet Plin


My brother and sister-in-law got me a new cook book for my birthday called Rustic Italian Food, and for not being Italian, my family and I sure do love the food! This book has SO many delicious scratch made pasta and bread recipes, and I can't wait to try them all.

This is the first one I tried, Goat Cheese and Beet Plin with Tarragon. It was SOOO GOOD! You may notice it does not look like the picture, but, it was my first attempt. I WILL be trying this dish again. I think the two main differences is, I made more pasta then the recipe yeilded, and I made the pasta too thick. I couldn't find one of the flours for the pasta, and thought it wouldn't make too much of a difference.

The recipe is a longer one, but I found it online for those who would like to give this a shot. I highly recommend the book though to anyone who loves Italian food and hand made pasta and fresh baked bread!
