Breakfast with Frank


My boyfriend and I love to cook, whether it’s competing against one another and family or friends, or cooking together. Our favorite thing to cook together is breakfast, especially with some Frank Sinatra on our speakers! This past weekend we decided to make one of my favorite dishes for breakfast, something that I’ve never made before! 

I’ve made crab cakes multiple times, this time I used two cans of crab cakes, some Cajun seafood seasoning, salt, pepper, bread crumbs, an egg, and green onion. I don’t measure, I go by look and feel. You can always add seasoning, but you can’t take away. I eyeball the breadcrumbs because I want them to help hold the crab together, but I want the crab to be the star! Next time I’ll measure so I can have the exact recipe. 

I mix all that together by hand (after I wash them of course, and rinse the crab meat to avoid shells, it’s important to work clean and wash/rinse food when necessary). Then we set the cast iron pan on the burner and let it heat, we added about a tablespoon of olive oil and butter, and then let that heat and drop the crab cakes down, if you hear a sizzle, your doing it righ (if not you just dropped em in the pan too soon, not to worry) let them cook on one side till it starts to brown, top them with some Cajun seasoning/old bay or just salt and pepper if you don’t like spicy stuff. When the bottoms are lightly browned, flip em, let them brown, then flip and stick them in the oven to finish. 

The asparagus my boyfriend made, in the oven, topped with some spices (salt, pepper, garlic). The Hollandaise sauce was made homemade in the blender. 3 egg yolks, about a teaspoon of lemon juice, paprika, and a cup of melted butter, blend until the consistency you desire, serve immediately, or pulse before serving if it sits a few minutes. 

Chris fried his eggs, I poached mine, for the first time. The key is to bring the water right before boiling, then salt the water, and then use a wine glass to gently drop the egg, one at a time, into the water. They should begin to float when they are ready.

Plate it as desired, and keep that Frank playing. Our favorite thing is to sing and dance as we cook! We have been doing this for 3/4 years now, it’s our little tradition!
